Stuffed Whole Pumpkin

 
The stuffing -
4 rashes of bacon
6 semi-dried tomatoes (we dried our own)
3 finger eggplant (equal to about 1/2 a normal one)
1 onion
2 cloves crushed garlic
1 small slice of wholemeal sourdough
 
Hollow out your pumpkin after cutting a lit for it, lightly salt and pepper the inside. Brown all your other ingredients in a pan. Turn off the heat and stir through a couple tablespoons of crushed feta. Place all ingredients in pumpkin, put 1/2 cup of cheddar in the top and put lid on...put in 170 degree fan forced oven for about 90 mins...to see if it's ready stick a skewer in the side...it will go through easily when pumpkin is cooked.

Chicken and Vege Wrap


300 gm chicken breast
Dehydrated capsicum, roma tomatoes, and eggplant
Homemade egg mayo (eggs, oil, lemon, water)
Homemade sweet chilli sauce 
Sorj wraps (avail at supermarket)

Slice chicken breast and cook in non-stick pan
I dehydrated my veges last night so had some on hand
Once chicken is cooked shred

Place wrap on plate, place small amount of mayo and sweet chilli on wrap
add chicken and assorted veges
roll and cut into small widths about 1 1/2-2cm thick and thread onto skewer

I put mine on a skewer to make the eggplant etc appealing to the kids and a little less messy,
they just pull a piece off at a time and the rest remains intact.      


Fruit and Nut Bites


1 cup organic roasted fruit and nut mix
1/2 cup sultanas
6 dried apricots
1/3 cup of cocoa powder

Use food processor to blitz the first 3 ingredients together.  Once processed into small
pieces add cocoa powder and process till mixed through.  Place
ingredients onto a tray lined with baking paper, flatten out and refrigerate for 1 hour.

Cut into small sqaures about 1 1/2-2cm in size, they are quite sweet so you only
need a little bit - they go well in the lunch box too.

Raisin Rock Cookies


This makes about 40 largish cookies (heaped tablespoon) or lots of small cookies!

3 small granny smith apples cored and peeled
4 eggs
6 tablespoons of honey
2 teaspoons of vanilla
3/4 cup of raisins
2 cups of shredded coconut
2 1/2 cup of plain flour (spelt or wholemeal)
3/4 cup of almond meal
2 teaspoons of cinnamon
1/4 teaspoon of salt
1 teaspoon bicarb soda

Other
Easier to use a food processor
Oven tray lined with baking paper

Step 1
Put apples in processor and whiz till pureed with small lumps

Step 2
Add eggs, honey, vanilla and mix

Step 3
Add almond meal, coconut, salt, bicarb, cinnamon and 2 cups of the flour, don't over process

Batter will not be as firm as a normal cookie batter but should not be really runny

Add remaining flour if needed

Place tablespoon size scoops on oven tray and bake in pre-heated 180 degree oven for 15mins

No need to make them smooth or round, just splat them on the tray (gently...lol) as the little bits
get a nice crispiness to them and the insides will remain a little softer like cake - you can cook them
a little longer if you like but they'll go harder all the way through :) enjoy - they can be stored in
an air-tight container in the fridge for 4-5days (if they last that long).  I'm trying to freeze them
at the moment so will let you know how that goes.

Easy Peasy Pork Patty


What you need

500gm pork mince, handful of kale, tablespoon dry herbs and 2 teaspoons garlic.

Mix together and cook in a tiny amount of butter - approx teaspoon

Serves 4 (2 bigger patties) or 6 small servings (3 smaller patties each)

 Crumbie Chicken


What you need
1 full chicken breast, 1-2 eggs, and combine equal parts (1/3 cup of each) almond meal, spelt flour,
shredded coconut and sesame seeds.  Cut chicken into strips, dip in eggs and dip
in the crumb mixture (dry ingredients).  Cook on stove top in a little bit of butter.
Serve with salad or oven roasted veges :)

Easy 10 Minute Dinner






Pan roasted kale, eggplant and tommy tomatoes served with
minute steak and avocado mayo (avo, fresh garlic and fresh lime juice)
